About The Owner

Meet Lyndsay Michie, expert baker and owner at Stiff Peaks.

Lyndsay trained under Michel Roux Jr. at the renowned Le Gavroche in London as an apprentice, where she honed her skills and won apprentice of the year, and later worked with two-Michelin-starred chef Andrew Fairlie, further refining her culinary expertise before opening her own luxury patisserie here in Ballachulish, Scottish Highlands.

Lyndsay brings a wealth of skill and dedication to her craft. Her vision for the business goes beyond simply baking; it’s about creating an experience that delights the tastebuds and is freshly made in shop each and every day making it a must-visit destination for locals and tourists alike.
